FERMENTHINKS, the first distillery in the Muncipality of Florence
Founded in May 2022 on Via Vecchia di Pozzolatico,in the picturesque hills surrounding the City of Florence, Fermenthinks distillery specialises in the custom production of spirits and liquers.
The founders are three well-known figures international mixology: Matteo Di Ienno, StefanoCicalese, and Julian Biondi.
Whisky now becomes part of their creations starting with a line of three limited bottlings that pay homage to the geniuses of the Renaissance.
The Triptych of our Whiskies is dedicated to the great Poets of the Renaissance
A tribute to those who, with the boldness of their pen, challenged time and inspired future generations to write new chapters of History. Alighieri, Torquato, and Boccaccio are released in a limited edition of only 300 bottles, each 700 ml.
The whisky used as the foundation of our distillates ages in oak barrels, then undergoes up to two "cask finishes." Our Whiskies are the result of unconventional aging processes, blending tradition with the pursuit of new frontiers.
They are an invitation to dare, to create something beautiful.

TORQUATO

This quote from Tasso highlights the passion and intensity behind the desire to create an extraordinary Whisky. After its initial aging, it is refined in medium toast French oak barrels, imparting the distillate with profound richness and unique aromatic nuances.

"Love, which allows no loved one to love in return"
This quote from Dante underscores the depth of emotions and love, reflected in the rich aromas and enveloping taste of the “Alighieri.” This whisky is first aged in French oak, then refined in Vin Santo casks, imparting a sweet, raisiny finish that enhances its complex flavor profile.

BOCCACCIO
"And the time came when what was once sweet to his senses became bitter to each one."
This quote from Boccaccio reflects the transformation in both character and flavor that occurs between the two aging stages. After an initial period in medium-toast oak, it continues its refinement in a Negroni cocktail cask, reinterpreting the original malty sweetness into a harmonious balance of bittersweet notes, giving the whisky a distinctive character that defies expectations.
